I started Head To Tail Craft Meats with the goal of reintroducing the knowledge and joy of small batch craft Salumi. We shouldn’t have to settle for the generic tasting, nitrate enriched, preservative filled and mass-produced packages of salamis and prosciutto. There’s a vast world of flavors and varities to explore and I believe we all deserve food done traditionally and made with love.
That’s not too much to ask, is it?
My wild boar comes from Caledon, Ontario and my pigs from Guelph, Ontario. I have sourced the highest quality spices from their country of origin and I do everything by hand. I know the love and joy I have in creating my Salumi will come through in the finished product.
