A Night To Honor The Rabbit

  

For Easter, I wanted to do something special and a little different to bring light to the wonderful animal, the Rabbit. I contently see people pass right by rabbits in the grocery store this time of year, mainly because they can’t see the potential for such a small animal. Rabbits can be purchased all year round but March to April and July to August are the best times, so why not eat a seasonal ingredient when you can. Yes, rabbits are small and challenging to butcher, however they are inexpensive, and you can literally use every bit, as I will show in my menu.  Each coarse will showcase a specific part of the Rabbit or a fun take on a classic, while being paired with seasonal ingredients and flavors. So for this Easter I hope you will take a seat and allow me to open your eyes and fill your stomach to the wonderful world of Rabbit.
